Q1:The proprietor asked us:Which mold is used to make turtle-shaped rice cake? Which mold is used to make flatbread?
A1:The store owner replied: Because this mold looks like a turtle, right?It comes out in an oval shape, with a little thickness in the middle, but its surface is smooth.If we want the Kueh to have a pattern, we must use this mold.

Q2:The material of these molds is wood. In addition to the shape of the turtle, there are other shapes next to it. Do they have different meanings?
A2:The store owner replied:This is peach. There are fish next to it, which means there will be surplus every year.Then there is another one here called Qianzi cakes, which was used on the birthday of the Jade Emperor.The turtle represents longevity.Peaches are used to celebrate birthdays.There is abundance every year and worshiping Deity, so this membrane represents four uses.There are four patterns on this mold, which is a rare mold with multiple uses.

Q3:What is Qianzi cakes?
A3:The store owner replied: Qianzi cakes are mostly used when worshiping Deity of Deity and the Deity of Wealth. The top of the cake is embossed with the continuous pattern of ancient coins, which symbolizes smooth career and abundant financial resources.
The lunar calendar has 12 months in an ordinary year, and 13 months in a leap year.So when we worship Deity, if this year is an ordinary year, we have to prepare 12 Qianzi cakes.12 Qianzi cakes to protect you every month is smooth and safe.What to do if it’s a leap year? We need to prepare 13 Qianzi cakes, and we can’t miss any month.

Q4:The proprietor asked us what the word is?
A4:The store owner replied:Our mold is mirrored left and right. On the contrary, when we print it, it will become front-facing only when it is turned over.This is the oldest Wuren cookie mold. The method is to make a cake and press it on. Turn it over and it will be flat, but this kind of pressing will have a disadvantage, that is, our cookie will become thin and flattened. This was the earliest. Later, the mold was changed to yin carving. The so-called yin carving means that the wood was removed and it was called yin carving. If the pattern was on top, it was called yang carving.

Q5:Wuren cookie represent?
A5:The store owner replied: Egg yolk kernels, sesame seeds, walnut kernels. Its definition does not have an absolute meaning, it just contains a lot of nuts, egg yolks, etc.

Q6:Are these molds left over from Japanese domination to this day?
A6:The store owner replied: These plane molds are earlier than Japanese domination.The earliest and most primitive molds were only plane.From a plane mold, it gradually turned into yin carving and yang carving like it is now, step by step and continuous improvement.

Q7:The Phoenix Eye Cake and mung bean cake we are eating now are relatively delicate cakes that melt in your mouth. Why has it progressed to this point?
A7:The store owner replied: Because Lukang was First Tainan, second Lugang, and third Bangka in the Qing Dynasty. Second Lugang means that Lugang used to be a commercial port, mainly for external trade. Therefore, Taiwan's export trade and import trade at that time were both conducted in Lukang. Therefore, Lukang's economy was very prosperous at that time. Prosperity means that everyone is making a lot of money. Because of the high level of commercial activities, literati and scholars were also particular about pastries, requiring more exquisite ones, such as Phoenix Eye Cake and mung bean cake.

Q8:Proprietor, how long have you been making chinesecake?
A8:The store owner replied: I am already the third generation.I am now 60 years old, and the pastry shop has been around since my grandpa’s generation. My grandpa started making chinesecake after he opened a pastry shop. This is when someone really started making cakes in Lukang. From then until now, we are the only store that is open for business every day in order to serve the public.Because these chinesecake can be used during sacrifices. Go to the temple to worship the Deitys and celebrate family birthdays.
People can wish birthdays, and Deitys can also wish birthdays. Chinesecakes can used in weddings and funerals.

Q9:Why is your shop called TSAO-HER Cake Shop?
A9:The store owner replied:Because my grandpa’s name is 朝, and he is from the generation with the character 朝. The word "和" was a name that was chosen by others at that time in the hope of social peace. Because there were a lot of wars back then. When my grandpa opened his shop, he only used a piece of red paper, wrote "朝和餅舖" on it and pasted it on our shop. Only later did the plaque appear. This plaque is 60 or 70 years old.
